Food Safety Tips for Your Restaurant

We believe food safety is the foundation of a successful food business. Serving delicious food is one thing, but serving safe food is important to ensuring your customers are happy and healthy. Food safety also helps ensure your business has a positive reputation. In this week’s edition of the Vendease Digest, we’re refreshing your knowledge on some essential food safety practices.

When receiving food from Vendease:

  • Visually inspect all deliveries for signs of damaged packaging, leaks, or infestations.
  • Always check expiration dates and corresponding batch numbers.
  • Reject any unacceptable items and note it on your invoice.
  • Ensure frozen and refrigerated items are delivered at the correct temperature.
  • Store frozen and refrigerated items immediately to avoid spoilage.

For your storage area:

  • Maintain a consistent temperature between 10°C and 21°C.
  • Embrace the First-In, First-Out (FIFO) method. Ensure older items are used first to prevent spoilage.
  • Store all items at least 6 inches off the floor and 2 metres away from walls.
  • Keep all cleaning chemicals and sanitizers away from food storage areas.
  • Maintain a clean and organised storage area.

For your refrigerator and freezer:

  • Cover, label, and date all food items stored in your refrigerator and freezer
  • Refrigerate all cold food items at or below 4°C
  • Store frozen foods between -18°C and -23°C.
  • Develop a routine to check and record the temperature of your refrigerators and freezers regularly.
  • Prevent condensation from dripping onto food by installing drip pans or wiping down surfaces regularly.
  • Store raw meat in leak-proof containers on the bottom shelf of your refrigerator.
  • Keep your refrigerator or freezer door closed.

Hi Koko,

I’ve gotten several requests from my customers to add delivery to our offerings but I’m not sure how to go about it. My restaurant isn’t really ready to invest money in our own delivery bikes and a lot of these riders are unreliable. How can I do this?

Hi Onike,

It’s great that you’re thinking of diversifying your offerings at your customers’ request, and we also understand your frustrations. We would suggest putting up your restaurant on food delivery platforms like Chowdeck, Glovo and more.
